Fajita Roll-ups

Serves: 12 servings
Ingredients
2 (seeded and thinly sliced) bell peppers
1 1/2 lbs. flank steak
1 (peel and slice into thin wedges) small red onion
1 (trim the ends and discard) bunch baby asparagus
2 tbsps avocado oil
1 packet fajita seasoning mix
Method
1. Butterfly steak from one of the long edges until steak opens like 2 thin layers of the leaves of a book. Use a sharp knife.
2. Place plastic wrap over butterflied meat until covered and pound covered meat until an even thin flank steak piece is formed, using a rolling pin or meat tenderizer.
3. Uncover tenderized steak and season with fajita seasoning until evenly covered.
4. Slice seasoned flank steak into 12 (5-by-2.5" long) parts.
5. Place a big skillet over high heat.
6. Add onions, asparagus and peppers into the hot skillet in batches, for about 1-2 minutes until blistered and char marks are formed.
7. Repeat process with the remaining veggies.
8. Adjust heat to med-high heat.
9. Arrange several wedges of onions, spears of asparagus and strips of peppers on each steak strip in a cross outline.
10. Repeat process with the remaining veggies and flank steak strips.
11. Wrap steak strip around veggies until tightly wrapped and hold ends with a toothpick.
12. Add 1 tbsp avocado oil into the skillet until heated.
13. Add steak rolls into the skillet and stir on each side for 1-2 minutes.
Tip: make sure all sides are evenly seared.
14. Take out rolls and repeat process until remaining roll and oil is used.
15. Split into well lidded meal prep containers and refrigerate for up to 4 days.
